The Muid’Oc is perfect for grape varieties which are sensitive to oxidation, which need more structure. A minimum of 18 months aging is recommended. Thanks to the thickness of the staves and the special toasting, Mediterranean grape varieties keep their freshness and the expression which comes from their maturity.

500L – American Oak or Haute Futaie French Oak Puncheon

600L – Demi-Muid (French Oak)

The Demi-Muid was used for centuries to transport wines by boat. Its name comes from the half-measure of the muid. It allows for long aging periods with phases of prolonged reduction. It is recommended for Mediterranean grape varieties (Syrah, Grenache and Mourvèdre) and aromatic white grape varieties (Sauvignon, Sémillon, Grenache, Muscat, Riesling, Chardonnay).

600L – Micro-Vinificator (French Oak)

The Micro-Vinificator is the ideal compromise between the benefits of vinification in wooden vats and the control offered by 600L barrels. It provides gentle treatment and gently extracts the components of the vintage. The Micro-Vinificator ensures a gentle vinification as it turns on its chassis so that its stainless steel paddles break the cap while protecting the berries. There is no pump, nor cooling system as the fermentation is longer than in stainless steel vats, and the temperatures are naturally stable. The anthocyanins fix themselves by combining with the ellagitannins of the wood and the micro-oxygenation is carried out by natural osmosis.

400L – Spirit Barrels

The peduncle oak of the Limousin type grows on rich and humid soil, giving fast-growing trees. It has a wide grain texture, and is rich in phenolic components that are easily extractable and suit a slow and gradual oxidation. Split to guarantee water-tightness and air-dried, the oak brings aromas and tannins that accent the spirits with subtle flavors, including the famous “rancio.”
